pgsty/minio stopped at its August 2026 rename to Silo and gets no fixes. MinIO's own images no longer exist. Silo keeps MinIO's command, env and data format. The digest pin keeps a re-tag from changing the build. Verify: `docker compose --profile storage up minio`, then `curl -sf localhost:9000/minio/health/live`. Why do we want to pin it? More importantly, we should update the image name in rudder-go-kit first and this pr should include a rudder-go-kit bump too

pgsty/minio. That name stopped at the August 2026 rename to Silo and gets no more fixes. Silo keeps MinIO's command,MINIO_ROOT_*env and data format, so nothing else in the file changes. How to verify
docker compose --profile storage up -d minio, thencurl -sf localhost:9000/minio/health/live. The console still answers on:9001.Verified on an arm64 Mac on 2026-10-01: the health route returned 200 after 14 s, and the console returned 200.
